The 10 Weeks of Chili, Week 6: White Chicken and Beans Chili

I realized that I seemed to start this series with the nontraditional chili recipes.  I believe the next 4 are all pretty standard, so this is the last nontraditional one.  This recipe was good, but a little spicy for me.  My 1 year daughter loved it!  So I guess that is saying something 🙂


White Chicken and Bean Chili


1.5 pounds chicken breasts

2 cups chicken broth

1 poblano pepper, finely chopped

2 red peppers, chopped

1 lime, juiced

4, 15-oz cans white beans

1/2 teaspoon salt

1 teaspoon cumin

1/4 cup chopped green onions

1/4 cilantro


  • Place all ingredients except green onions and cilantro in crockpot.
  • Cook on low for 7.5 hours.  Take chicken out and shred.
  • Return shredded chicken to crockpot and add green onions and cilantro.  Cook 30 more minutes on low (8 hours total).
  • Enjoy!
