The 10 Weeks of Chili, Week 5: Vegan Lentil and Quinoa Chili

This week’s chili recipe is vegan and full of a ton of healthy deliciousness!  I thought it was pretty good and was definitely something unique and fun to try!  Hope you enjoy!

Vegan Lentil and Quinoa Chili

Ingredients:

1 red onion, chopped

4 garlic cloves, minced

1 red pepper, chopped

6 carrots, peeled and chopped

3 tomatoes, chopped

2, 15-oz cans black beans, drained and rinsed

1 cup dry brown lentils

1/2 cup uncooked quinoa

1 cup frozen organic corn

6 cups vegetable broth

1 tablespoon coriander

1 tablespoon cumin

1 tablespoon oregano

3 tablespoons chili powder

Directions:

  • Add all ingredients to crockpot.
  • Cook on low for 8 hours.
  • Enjoy!
