The 10 Weeks of Chili, Week 4: Sweet Red Pepper and Corn Chili

I liked this week’s chili!  The red pepper and corn gave the chili a sweet flavor and making it over the stove felt quick in comparison to all the crockpot recipes.  Hope you enjoy!


Sweet Red Pepper and Corn Chili


1 tablespoon olive oil

1 yellow onion, chopped

3 garlic cloves, minced

1 red pepper, chopped

1 1/2 cup frozen organic corn

1 pound ground turkey

1, 28-oz box chopped tomatoes

2, 15-oz cans kidney beans

1 1/4 cups chicken broth

4 tablespoons chili powder

2 teaspoons ground cumin

1 teaspoon dried oregano

1/4 teaspoon cayenne pepper

1/2 teaspoon salt


  • Heat olive oil in large pot over medium heat.  Add in onion and garlic and cook for a couple minutes.
  • Add in turkey and cook until cooked through.  Add in red peppers and cook another minute.
  • Add in everything else.  Bring to a boil and then reduce to simmer for 30-45 minutes, stirring occasionally.
