Ratatouille

My father-in-law brought me some tomatoes, green peppers, and basil last week from his garden and suggested I make ratatouille with it.  I haven’t tried ratatouille before so I thought I would give it a try.  It’s quite good.  I thought the basil and parsley gave it a great summery flavor.  Hope you enjoy!

Ratatouille

Ingredients:

1/4 cup olive oil

1 yellow onion, chopped

2 garlic cloves, minced

2 small eggplants, chopped

1/4 teaspoon dried thyme

2 green peppers, chopped

1 red pepper, chopped

1 zucchini, chopped

1 yellow squash, chopped

5 medium tomatoes, chopped

1 handful basil, chopped

1-2 tablespoons parsley

1/4 teaspoon sea salt

1/4 teaspoon black pepper

Directions:

  • Heat olive oil in large pot over medium-high heat.  Once hot, add onions and garlic and cook for about 3-5 minutes.
  • Add eggplant and thyme and cook another 3 minutes, stirring occasionally.
  • Add green peppers, red pepper, zucchini, and squash.  Cook another 3 minutes.
  • Add tomatoes, basil, parsley, salt, and pepper.  Cook another 3 minutes.
  • Enjoy!
