Black Bean Meatless Meatloaf

I heard something on NPR the other day about how the one common thread in societies that live really long is that they eat a lot of beans.  I haven’t researched this any further, and didn’t even listen to the entire story, but I’m going for it anyway.  I found a modified version of this recipe online and thought I’d give it a try.  It’s a black bean “meat”loaf.  A beanloaf (?) perhaps.  I’ll be honest, it wasn’t amazing and was a lot of work so I probably won’t make it again, but it’s fun to switch things up and try something new so I’m going to share it anyway.  It’s vegan and healthy and full of those delicious beans that might (if I correctly interpreted the 5 minutes of the story I heard correctly) help us all live longer!

Black Bean Meatless Meatloaf

Ingredients:

3 tablespoons flaxseed meal

1/2 cup water

1 tablespoon olive oil

1 yellow onion, chopped

3 garlic cloves, minced

1 red pepper, chopped

1 carrot, shredded

1 jalapeño, finely cut

1/4 cup cilantro

2, 15-0z cans black beans

3/4 cup frozen organic corn

1/2 cup oats

1/8 cup arrowroot flour

1/4 teaspoon sea salt

1/4 teaspoon black pepper

2 teaspoons cumin

1 tablespoon chili powder

1 teaspoon oregano

For the top – 

1 avocado, mashed

1 lime, juiced

1/4 teaspoon garlic powder

1/4 teaspoon sea salt

Directions:

  • Mix 3 tablespoons flax and 1/2 cup water in bowl and set in fridge while continuing to work.
  • Heat olive oil over medium heat.  Add onion, garlic, red pepper, carrot, and jalapeño.  Saute for 5 minutes.
  • Use food processor to process one can of black beans until smooth.
  • Mix everything (except ingredients for top) in large bowl – flaxseed meal/water mixture, sautéed vegetables, pureed beans, other can of beans, cilantro, corn, oats, arrowroot flour, and spices.
  • Place mixture in lightly greased 9″ loaf pan.
  • Bake at 350 degrees for 35-40 minutes.
  • While baking, mash avocado with lime juice, sea salt and garlic powder.  When the beanloaf is done baking, spread avocado mixture evenly over the loaf.

    1/2 cup cocoa 1/3 cup canola oil 1 can (15 ounces) black beans or kidney beans, drained 1-1/4 cups sugar 3 eggs 1/2 teaspoon baking powder 1 teaspoon vanilla 1/2 cup chopped toasted walnuts (Optional)

    Preheat oven to 350 degrees. Butter an 8 x 8 inch or a 7 x 11 inch baking pan. In a large food processor or blender, combine all ingredients except nuts. Blend well until very smooth. Stir in nuts. Pour batter into pan. Bake 35 – 40 minutes or just until set in the center. Do not over-bake.

    For a flourless, chocolate cake and an elegant presentation, pour batter into round cake pan. Cut into wedges and serve with raspberry or strawberry sauce.

    Note: I don’t use sugar so I usually put 1/4-1/2 cup honey in instead and the brownies. I like to add dark chocolate chips and I use regular walnuts. Yummy!
