Crockpot Vegetable Soup

I thought I would balance out today’s posts: meatballs and vegan soup.  I guess we really do eat a little bit of everything in my family!  We had this soup last night for dinner.  Very hearty!  As always, I love just about anything I can make in advance and put in the crockpot.  Hope you enjoy!

Crockpot Vegetable Soup

Ingredients:

1 yellow onion, chopped

2 garlic cloves, minced

1 sweet potato, cubed (I only peel any gross spots)

3 carrots, peeled and chopped

2 stocks celery, chopped

2 cups fresh green beans, chopped

1 green zucchini, cubed and chopped

1 tomato, chopped

2 cans cannellini beans, rinsed

4 cups vegetable broth

1/2 teaspoon black pepper

1/8 teaspoon allspice

1 teaspoon paprika

1 bay leaf

Directions:

  • Place everything in the crockpot.  No need to cook anything in advance.
  • Cover and cook on low for 8 hours.
  • Enjoy!

Notes:

It doesn’t get any easier than that!  Chop everything and throw it in.  Enjoy and Happy Fourth of July!
