Turkey Veggie Chili

As promised, here is my favorite nontraditional chili recipe.  This is one of my main go-to recipes that I make probably about every 5-6 weeks.  It makes a big batch that is great for work lunches.  It is so healthy and delicious.  Hope you enjoy!

Turkey Veggie Chili

Ingredients:

1 pound ground turkey

1 tablespoon olive oil

6 carrots, peeled and chopped

1 yellow onion, chopped

2 garlic cloves, minced

2 green peppers, chopped

6 stalks celery, chopped

2 zucchini, halved and then sliced

1 eggplant, chopped

1 28oz box chopped tomatoes

2 tablespoons chili power

2 teaspoons ground cumin

1/2 teaspoon sea salt

Directions:

  • Brown ground turkey in skillet on stove and set aside.
  • Heat olive oil in large saucepan over medium heat.  Add carrots and onions and cook for about 2 minutes.
  • Add everything else: turkey, garlic, green peppers, celery, zucchini, eggplant, tomatoes, chili powder, cumin, and salt.
  • Simmer over medium-low heat for about 25 minutes, stirring occasionally, until veggies are desired softness.
  • Enjoy!
