Banana Coconut Flour Pancakes

These pancakes are healthy, delicious, and not too difficult to make.  I have heard that some coconut flour pancakes don’t stick together well, but the eggs do a great job holding these together.  Hope you enjoy!

Banana Coconut Flour Pancakes

Ingredients:

1 banana, mashed

4 eggs

1/2 cup almond milk

1 teaspoon apple cider vinegar

1 teaspoon vanilla

1/4 cup coconut flour

1 1/2 teaspoon cinnamon

1 teaspoon baking soda

2 tablespoon flax meal

pinch of salt

maple syrup

Directions:

  • Whisk all ingredients together except maple syrup.
  • Cook on skillet like normal pancakes.
  • Top with maple syrup and enjoy.

Notes:

These pancakes almost feel like a cross between pancakes and french toast.  I love them and hope you enjoy as well.  Let me know what you think!  Also, I would love to hear your favorite pancake recipe!
