These pancakes are healthy, delicious, and not too difficult to make. I have heard that some coconut flour pancakes don’t stick together well, but the eggs do a great job holding these together. Hope you enjoy!
1 banana, mashed
1/2 cup almond milk
1 teaspoon apple cider vinegar
1 teaspoon vanilla
1/4 cup coconut flour
1 1/2 teaspoon cinnamon
1 teaspoon baking soda
2 tablespoon flax meal
pinch of salt
- Whisk all ingredients together except maple syrup.
- Cook on skillet like normal pancakes.
- Top with maple syrup and enjoy.
