Paleo Mexican Skillet

We had this delicious Mexican-style skillet for lunch today and it was great!  Hope you enjoy it as well!

Ingredients:

1 pound ground beef

2 garlic cloves, minced

1/4 teaspoon sea salt

1/4 teaspoon black pepper

1/2 teaspoon onion powder

1/4 teaspoon crushed red pepper flakes

1 tablespoon chili powder

1 teaspoon ground cumin

4 zucchinis, cut into cubes

4 tomatoes, cut into cubes

Directions:

  • Brown ground beef in skillet with garlic, salt, and pepper.  Once browned, add onion powder, red pepper flakes, chili powder, and cumin.  Continue cooking another minute.
  • Move to large saucepan (or continue cooking in skillet if your skillet is large and has a lid).  Add zucchini and cook covered on medium-high heat for 7 minutes, stirring occasionally.
  • Add tomatoes and continue to cook covered for 4 minutes, stirring occasionally.
  • Enjoy!
