Vegan Goji Berry Cookies

Today I was inspired to try to adapt my favorite cookie recipe – my mom’s oatmeal chocolate chip cookies – into a new vegan goji berry cookie recipe.  They turned out great!  I’ve already eaten 4 today!  I’m quite excited to share the recipe:

Ingredients:

1 1/2 cup whole wheat flour

1/2 teaspoon salt

1 teaspoon baking soda

1 1/2 teaspoon cinnamon

1/2 cup coconut oil (heated so it is liquid)

1/2 cup honey

1/4 cup unsweetened apple sauce

1 teaspoon vanilla

1 chia egg (mix 1 tablespoon chia seeds and 3 tablespoons water in a bowl and let set a couple minutes until it has the consistency of an egg)

2 1/2 cups old fashioned oats

1/2 cup walnuts

1/2 cup goji berries

Directions:

Preheat oven to 350 degrees
Mix all ingredients thoroughly
Roll into balls and place on cooking sheet
Bake 9-10 minutes until golden brown

Notes:

The recipe makes about 20 cookies. It is easiest to just form the cookies with your hands. The batter is sticky, but these cookies are vegan, so feel free to lick the leftover dough off your fingers when you’re done 🙂
